Method
Preheat the grill to medium heat.
Wash and dry the apples. Cut vertical slices around each apple without cutting through the bottom.
Mix the softened butter, brown sugar, cinnamon, and vanilla extract in a small bowl.
Carefully spread the butter mixture between the apple slices.
Place each apple on a sheet of foil and wrap loosely.
Grill the apples for 20 to 25 minutes until tender but still holding their shape.
Carefully open the foil during the last 5 minutes if you want the tops slightly caramelized.
Serve warm with ice cream, whipped cream, or chopped pecans if desired.
Notes
Store leftovers in the refrigerator for up to 3 days. Firmer apples work best because softer varieties break down too quickly on the grill. These can also be baked at 375°F for about 30 minutes if grilling isn’t an option.
