Strawberry Ricotta Bruschetta

Crispy toasted baguette topped with creamy ricotta, fresh strawberries, basil, honey, and balsamic glaze for an easy elegant appetizer.

Ingredients
  

  • 1 French baguette
  • 1 tablespoon olive oil
  • 1 cup whole milk ricotta cheese
  • 1 cup fresh strawberries sliced
  • 1 tablespoon honey
  • Fresh basil leaves torn
  • Balsamic glaze for drizzling
  • Salt and black pepper to taste

Method
 

Preheat the oven to 400°F.
    Slice the baguette into 1/2-inch slices and arrange on a baking sheet.
      Brush both sides lightly with olive oil and bake for 8 to 10 minutes until golden and crisp.
        In a small bowl, season the ricotta with a pinch of salt and black pepper.
          Toss the sliced strawberries with honey and let sit for 5 minutes.
            Spread ricotta onto each toasted baguette slice.
              Top with strawberries, drizzle with balsamic glaze, and garnish with torn basil leaves.
                Serve immediately while the bread is crisp.

                  Notes

                  These are best assembled right before serving to keep the bread crunchy. If your ricotta seems watery, strain it for 10 to 15 minutes before using. Toasted baguette slices can be prepared several hours ahead.
