Salmon with Fresh Mango Salsa

Smoky glazed salmon topped with fresh mango avocado salsa for a bright easy dinner packed with sweet and savory flavor.

Ingredients
  

For the Salmon
  • 16 ounces salmon fillets
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce or coconut aminos
  • 1 tablespoon maple syrup or brown sugar
  • 2 cloves garlic minced
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • 1 teaspoon kosher salt
For the Mango Salsa
  • 1 large mango diced
  • 1 large ripe avocado diced
  • 1/2 red bell pepper diced
  • 1/4 cup red onion finely diced
  • 1/2 jalapeño seeded and minced
  • 2 tablespoons fresh cilantro chopped
  • 2 tablespoons fresh lime juice
  • 2 teaspoons Tajin

Method
 

In a medium bowl, combine mango, avocado, red bell pepper, red onion, jalapeño, cilantro, lime juice, and Tajin to make the salsa.
    In a separate bowl, whisk together olive oil, soy sauce, maple syrup, garlic, paprika, chili powder, and salt.
      Brush the marinade evenly over the salmon fillets.
        Heat a large skillet or grill over medium-high heat.
          Cook the salmon for 4 to 5 minutes per side until caramelized outside and flaky inside.
            Remove the salmon from heat and let rest for 2 minutes.
              Spoon fresh mango salsa over the salmon before serving.

                Notes

                The mango salsa is best served fresh the same day. Pat the salmon dry before seasoning so the glaze sticks better. Leftover salmon works well in tacos or rice bowls.
