Grilled Carrots with Honey Brown Sugar Glaze

Tender grilled carrots coated in a sweet honey brown sugar glaze with smoky seasoning for an easy summer side dish.

Ingredients
  

  • 2 pounds whole carrots peeled
  • 2 tablespoons butter melted
  • 2 tablespoons honey
  • 2 tablespoons brown sugar
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon chopped fresh parsley optional

Method
 

Preheat the grill to medium heat.
    Bring a large pot of salted water to a boil and cook the carrots for 5 minutes until slightly tender. Drain and pat dry.
      In a small bowl, whisk together the melted butter, honey, brown sugar, smoked paprika, garlic powder, salt, and black pepper.
        Toss the carrots with half of the glaze mixture until coated.
          Place the carrots on the grill and cook for 4-5 minutes per side until grill marks appear and the carrots are tender.
            Brush the remaining glaze over the carrots during the last 2 minutes of cooking.
              Remove from the grill, sprinkle with parsley if desired, and serve warm.

                Notes

                Drying the carrots well after boiling helps them caramelize instead of steam on the grill. Watch carefully during the final minutes since the honey glaze can burn quickly. Leftovers can be refrigerated for up to 3 days and reheated in a skillet or air fryer.
