Chinese BBQ Chicken (Char Siu Style)

Tender chicken thighs marinated in a sweet and savory Char Siu-inspired sauce, then roasted until caramelized and juicy.

Ingredients
  

  • pounds boneless skinless chicken thighs
  • cup hoisin sauce
  • ¼ cup low-sodium soy sauce
  • 3 tablespoons honey
  • 2 tablespoons brown sugar
  • 1 tablespoon sesame oil
  • 4 garlic cloves minced
  • 1 teaspoon Chinese five-spice powder
  • ¼ teaspoon white pepper
  • 1 teaspoon red food coloring optional
  • 2 tablespoons honey for glazing

Method
 

In a large bowl, whisk together hoisin sauce, soy sauce, honey, brown sugar, sesame oil, garlic, five-spice powder, white pepper, and optional food coloring.
    Add the chicken thighs and coat thoroughly. Cover and refrigerate for at least 4 hours or overnight.
      Preheat oven to 400°F. Line a baking sheet with foil and place a wire rack on top.
        Arrange chicken on the rack in a single layer and bake for 20 minutes.
          Brush with a little glaze and continue baking for 8–10 minutes, or until the internal temperature reaches 165°F.
            Brush with the remaining honey and broil for 2–3 minutes until caramelized.
              Let the chicken rest for 5–10 minutes before slicing and serving.

                Notes

                Store leftovers in the refrigerator for up to 4 days. For meal prep, slice the chicken after cooling and store with rice and vegetables. Avoid overcooking, as the glaze can darken quickly under the broiler.
